Easy Watermelon Salsa Recipe

You know we have a thing for watermelons around here. Delicious, hydrating, and packed with good-for-you vitamins and antioxidants, watermelons are one of the perfect superfoods. We use watermelon seed oil as a signature ingredient in our hand and body care formulas because of all of its amazing properties for beauty and health. And part of our brand name comes from the watermelon :)

In addition to all things watermelon, I love coming across easy-to-make, healthy, delicious recipes that don't require many ingredients.

Now that the weather is starting to warm up in many places across the country, juicy watermelon sounds particularly mouth-watering. And this colorful watermelon salsa dish is a pretty and colorful addition to any table.

The ingredient list to make it is very simple: watermelon, cilantro, mint, jalepeno, and juice & zest from a fresh lime. I have always had an aversion to onions, so I left them optional, but feel free to add red onions if you prefer.

This Cinco de Mayo, why not try this simple recipe for watermelon salsa? Add it to tacos, or serve as is with yummy tortilla chips. And if you really want to get festive, start the celebrations off with our recipe for watermelon margaritas...

WATERMELON SALSA

INGREDIENTS:

-4 cups diced seedless watermelon
-2/3 cup chopped fresh cilantro leaves
-1/2 cup chopped fresh mint leaves
-1 or 2 jalapeno(s), seeded and finely diced, add more/less to taste
-1 cup diced red onion, about half a medium red onion (optional)
-1 lime, zest and juice

INSTRUCTIONS:

1. Chop and dice all ingredients to desired size.
2. Zest the skin of a fresh lime, cut in half, and juice both sides.
3. Toss all ingredients together until combined.
4. Serve immediately, or cover and refrigerate for up to 2 days.

Spoon onto your favorite tacos, or serve in a bowl with crisp tortilla chips!
